This healthy eating tomato and roasted red pepper chicken rollatini will take you just 5 minutes to make.

This is an all-in-one dish, where the deboned chicken encases a stuffing of red pepper and other spicy.

It will slice very easily and the spicy taste will make it even more delicious.

How To Make Tomato-Roasted Red Pepper

INGREDIENTS FOR 4 SERVINGS.

4 even-sized medium chicken breasts.

1 tsp garlic powder

1 tsp dried Italian seasoning

8 oz jar sun-dried tomatoes

10 oz jar roasted red peppers

4 cloves fresh or roasted garlic

2 tbsp chicken broth

Toothpicks

2 tbsp dried or fresh parsley.

Directions.

Preheat your oven to 190 C.

Pound your chicken breasts into thinner pancake-like, 1/2-inch thick pieces.

Season with garlic powder, and Italian seasoning and rub into the meat on all sides.

In a Blender, add your sun-dried tomatoes, and 4 cloves of roasted garlic and blend. Add a tiny bit of organic chicken broth or water, if necessary, to help purée into a nice thick sauce.

Spread a thin layer of the purée on the chicken and top with a sprinkle of dried or fresh parsley.

Roll chicken and use a toothpick to hold it together, place rolls onto a lightly sprayed flat sheet pan.

Bake in your preheated oven for about 30-35 minutes, or until the chicken is cooked through. Finish with a quick 1-2 minutes broil to brown the tops.

Serve with roasted green beans. Considering incorporating some greens, add a few pieces of fresh spinach or kale before rolling up the chicken.
