Clean Eating Peppermint Patties.

These homemade peppermint patties are mostly a coconut base, with a bit of coconut flavour, there is no substitution for coconut here.

Peppermint extracts are varied, so you may need to adjust the peppermint flour by adding a tiny bit more to your liking.

The first time I made this, I couldn’t get peppermint extract so I used lime extract, and it was so yummy.

Sweetness factor depends on the individual.

INGREDIENTS.

1 1/2 cups shredded unsweetened coconut (organic preferable).

2 tbsp unsweetened coconut milk.

2 tbsp unrefined coconut oil.

1/4 cup raw honey, or pure maple syrup.

1/2 tsp peppermint extract, or to taste.

1 cup of dark chocolate, melted.

INSTRUCTIONS.

In a blender or food processor, place the shredded coconut, coconut milk, coconut oil, honey and peppermint extract.

Process just until a smooth paste has formed.

Shape this paste into round discs and coat with a light coat of your melted chocolate.

Place them on wax paper, then set in the freezer for about 30 minutes.

Enjoy.
