Tangy chipotle and lime shrimp lettuce wraps
Brighten up your day with this super easy and fiercely delicious meal, chipotle lime shrimp wraps are the best when it comes to a get-together night with your friends.
Note; chipotle chilies are dried, smoked jalapenos while adobo is a tangy, slightly sweet red sauce. So the ingredients may include peppers, spices, herbs, garlic, and vinegar.
It’s a good idea to freeze the extra peppers in adobo and sauce in an ice tray cube for future use.
Ingredients.
2 lb. large shrimp, peeled and deveined
2 heads butter or bibb lettuce leaves
3 chipotle peppers with adobo sauce
3 fresh cloves garlic, minced
The zest of 1 large fresh lime
The juice of 1 large fresh lime
2 tbsp avocado oil, unrefined coconut or olive oil
1/2 tsp freshly cracked black pepper
1/2 tsp sea salt
To Serve.
Bunch of freshly chopped cilantro leaves
1 large English cucumber, chopped
Additional lime wedges
Chopped green onions

Directions.
Chop your shrimp into small bite-sized pieces and place them into a large glass bowl.
Finely chop up your chipotle pepper and add it to that same bowl together with adobo sauce, minced garlic, lime zest, lime juice, sea salt, and pepper. Toss shrimp gently to coat very well with all the sauce.
Allow shrimp to sit in this sauce for about 10 minutes while you prepare your lettuce.
Thoroughly rinse the lettuce with cold water, then pat dry with paper towels or allow it to air dry on towels. Arrange lettuce leaves nicely on a large platter, you can double them up if desired, to better hold the filling.
Heat a large heavy-bottomed pan or cast iron over medium-high heat, add in your oil, and heat until simmering, add in your shrimp with its sauce and cook stirring periodically, until slightly seared and opaque about 3 minutes.
Divide your chipotle lime shrimp among your lettuce leaves, sprinkle with chopped cucumbers, and cilantro, and drizzle with freshly squeezed lime juice.
Serve immediately and enjoy.
