Make sure to use avocado oil to roast your potatoes, but a lot. Avocado oil is far better for roasting vegetables, in my opinion though.

If you ever had soaking fries, it’s likely they were just coated in too much oil. Salting your fries after roasting, if soaking continues fries continue to be a problem for you.

The salt will draw out the moisture in vegetables if they are sitting in salt throughout the entire prep&cooking process, then you are just dealing with all of that moisture being released.

Simply wait until serving to sprinkle with a tiny pinch of salt. Make sure your fries are placed in a nice, even layer on the sheet pans, they need space to crisp up.

Proper airflow without any overcrowding on your sheet pans will help a lot, use several pans or cook in batches if you are making a lot of them, use parchment paper on your sheet pans.

Ingredients for 6 servings.

5 sweet potatoes or yam

4 cloves fresh garlic, minced or grated

1/4 cup freshly chopped herbs of choice (thyme leaves, sage, parsley, rosemary, chives, etc.)

1 tsp chili powder

2 tbsp avocado oil or extra virgin olive oil

Sea salt and freshly ground black pepper, to taste.

Instructions.

To get nice, crispy oven-baked fries.

Slice the potatoes into sticks or fry-shaped pieces about 1/4-inch thick with a very sharp knife and soak them for a half-hour in cold water to remove excess starch.

Rinse and pat dry well. Throw in a bowl and lightly drizzle with oil, toss your spices (herbs, garlic, pepper) and drizzle with oil together with a tablespoon or 2 (depending on the size of your fries) and toss until everything is evenly coated and there are no powdery white spots.

Don’t add salt until you are done baking, it draws out moisture and will make your fries soggy.

Preheat your oven to 425 F, and line two baking sheets with parchment paper.

Spread out the fries evenly onto the prepared baking sheets in an even layer, and bake for 10-15 minutes on each side.
