Preparation.
1. Preheat the oven to 220°C top/bottom heat (200°C fan oven). In a large bowl, add 2 tbsp of yogurt with half of the mustard, salt, and pepper, add the chicken strips to the marinade and stir several times so that the strips are well covered.
2. Put the chickpeas in a colander and rinse under running water until it runs clear. Place the chickpeas with the bacon, salt, and pepper on a baking tray lined with parchment paper and bake in the oven for 10 – 12 minutes until the chickpeas are golden brown. Put the garlic cloves on the baking sheet.
3. Halve the heart of lettuce lengthways and cut into strips approx. 1 cm wide. Halve the tomato, remove the stalk, and cut the tomato halves into 1 cm cubes. Put the lettuce strips and diced tomatoes in a large bowl and cut the spring onion into fine rings.
4. In a large skillet, 1 tbsp olive or avocado oil on high heat and fry the marinated chicken breast strips in it for approx. 5 – 7 minutes, turning until the strips are golden brown and cooked through.
5. After the end of the cooking time, remove the garlic from the oven, peel it off and press it into a small mixing bowl. Add the remaining yogurt, mustard, mayonnaise, Worcestershire sauce, and half of the hard cheese to the mixing bowl. Mix with a blender to a fine dressing, and season the dressing with salt and pepper to taste.
6. Add the chickpeas and bacon to the lettuce strips and diced tomatoes, add the dressing and mix well. Arrange the salad on plates, arrange the chicken strips and the remaining hard cheese flakes on top, and top with the spring onion rings. Enjoy your meal!
